Risotto de remolacha
Hoy os traigo una receta que le vi cocinar a David de Jorge en su programa Robin Food la anterior temporada. Me llamó la atención ya que no estoy muy acostumbrada a cocinar con remolacha. Siempre la he solido utilizar en ensaladas o para hacer chips, pero nunca en un plato como éste.
El resultado me ha gustado mucho, es un plato espectacular por la intensidad de su color y porque es muy sabroso. Una mezcla entre el dulzor de la propia remolacha y la potencia de los sabores del pimiento choricero, vino tinto y el parmesano del final. Hay que probarlo para saberlo, así que os animo a todos a prepararlo. ¡No os defraudará!
Seguí la receta como la preparó él, pero cambié algunas cantidades, porque no tenía ni remolacha ni tuétano suficiente. David lo acompañó con una coliflor, pero como en casa no gusta mucho, decidí añadirle cebollino picado, que le aporta un poco de frescor.
Ingredientes
- 190 gr de arroz carnaroli (especial para risottos)
- 165 gr de remolacha fresca
- 1 cucharadita de carne de pimiento choricero
- 1 cucharada de tuétano de ternera
- 2 chalotas
- 1 rama de apio
- 20 gr de mantequilla
- 1/2 vaso de vino tinto
- 80 gr de remolacha licuada
- 800 ml de caldo de verduras
- 2 cucharadas de parmesano rallado
- 1 puñado de cebollino
- Sal, pimienta y aceite de oliva
Elaboración
En una cazuela baja puse la chalota y el apio, bien picados, junto con la remolacha cortada en dados muy pequeños, a pochar en poco de aceite, mantequilla y tuétano. Lo salpimenté y lo deje a fuego bajo.
Cuando las verduras estaban casi transparentes, añadí el arroz, y lo rehogué todo junto a fuego más vivo para que el arroz se tostara ligeramente. Después, le añadí la carne del pimiento choricero y el vino tinto, y lo reduje.
Una vez que el arroz estaba seco, añadí la remolacha licuada. Luego, fui añadiendo el caldo poco a poco, cocinándolo todo aproximadamente unos 15 minutos, y removiéndolo muy a menudo. El arroz quedó ligeramente al dente y con un poco de caldo cremoso.
Retiré la cazuela del fuego y le añadí el parmesano rallado y un poco de aceite de oliva en crudo. Lo mezclé todo y lo decoré con un poco de cebollino picado.
Observaciones
El tiempo de cocción variará según la capacidad de absorción del tipo de grano de arroz. En esta receta, yo utilicé un tipo de grano de arroz especial para risottos, llamado Carnaroli. Pero eso no significa que no podáis intentar la receta con otros tipos de arroz. Por eso, os recomiendo ir probando el arroz según se vaya cocinando, y jugar con la cantidad de caldo y la intensidad del fuego hasta conseguir la textura deseada.
