Tarta de chocolate y nata
Hoy vengo con una tarta de chocolate y nata. Se trata de un bizcocho de chocolate relleno y decorado con nata montada.
Se la dedico a mi hermana por su cumpleaños. Ya se que han pasado dos días pero creo que le gustará igualmente. En mi defensa tengo que decir que esta semana estoy de vacaciones y he conseguido relajarme tanto que no he tenido «tiempo» de hacerlo antes. ¡Qué morro tengo! Lo dicho, hace dos días cumplió 22 añitos y aunque la distancia no le permita degustarlo, hemos decidido darnos un subidón de azúcar a su salud. ¡Por ti, hermanita. Zorionak!
Por cierto, ya he empezado a hacer mi lista para Olentzero. He decidido pedir unas varillas eléctricas. Basta ya de montar claras y nata a mano, ¡tengo hasta agujetas!
Al lío con la receta.
Ingredientes para el bizcoocho
- 300 gr de chocolate negro
- 150 gr de harina
- 10 gr de levadura tipo Royal
- 240 gr de azúcar
- 6 huevos
- 200 gr de mantequilla
Ingredientes para la nata montada
- 100 gr de azúcar
- 250 gr de nata líquida
Elaboración
Para el bizcocho, he separado las claras de las yemas, mezclando estas últimas con el azúcar hasta conseguir una mezcla blanquecina y esponjosa. He añadido después la mantequilla a punto de pomada. Mientras tanto, he fundido el chocolate al baño maría para añadirlo a la mezcla anterior.
En otro recipiente, he montado las claras a punto de nieve para añadírselas a la primera mezcla, junto con la harina y la levadura bien tamizadas. Es importante hacer esta última incorporación con una paleta con movimientos suaves de abajo hacia arriba para que las claras no pierdan aire y la mezcla se mantenga esponjosa. Ésta es la clave para que el bizcocho resulte ligero.
He horneado la mezcla en dos moldes, para tener dos discos, durante 20 minutos a 160º.
Para montar la nata, he batido la nata sola hasta conseguir un ligero espesor y después he añadido la mitad del azúcar y más tarde la otra mitad. Es muy importante, para que la nata no se corte por exceso de batido, que la nata y el recipiente estén muy frios. En este caso, la he montado apoyando el bol en un recipiente con hielos, para que en ningún momento subiera la temperatura. Lo recomiendo totalmente.
Para montar la tarta, he rellenado y huntado por encima los dos discos de bizcocho con la nata, y la he decorado con un poco de chocolate rallado.
