Turrón de pistachos
El turrón es algo que nunca falta en todas las casas por navidad y este año me ha dado por preparar uno casero. He seguido una receta de turrón de Alicante sustituyendo las almendras por pistachos, por lo que podéis hacer lo mismo con el fruto seco que más os guste.
El toque ligeramente salado del pistacho me ha gustado en este turrón porque contrasta, en cierta manera, con el dulzor de la miel. Lo repetiré para nochebuena, porque de este ¡ya no queda rastro!
Os explico cómo lo he hecho.
Ingredientes
- 145 gr de pistachos pelados (400 gr de pistachos enteros)
- 220 gr de azúcar
- 220 gr de miel
- 1 clara de huevo
Elaboración
Antes de empezar he pelado los pistachos quitándoles también el pellejo del fruto, con mucha paciencia.
En una cazuela, he añadido la miel y el azúcar para que se disuelvan poco a poco, a fuego muy lento. Mi vitrocerámica va del 0 al 3, y para que os hagáis una idea, lo he tenido durante toda la elaboración entre el 0,5 y el 1. Cuando la mezcla ha empezado a burbujear, he dejado que se cociera durante 5 minutos más.
Mientras tanto, he batido las claras hasta que han cogido un poco de cuerpo sin que se montaran del todo. Con la cazuela fuera del fuego, he ido añadiendo poco a poco la clara. Mientras, la he ido mezclando con mucho cuidado para que la clara no se cuajara. Una vez la clara se ha mezclado correctamente, la he vuelto a poner al fuego sin parar de remover hasta que el caramelo adquiriera el punto de bola fuerte. Podréis comprobar que la mezcla ha llegado a este punto, cogiendo con la punta de un cuchillo un poco del caramelo e introduciéndolo en agua muy fria; si la mezcla se convierte en una bola bastante resistente al moldeado.
Para terminar, he introducido los pistachos y lo he mezclado bien. He esperado a que la mezcla estuviera tibia antes de echarla al molde. Hay moldes especiales para turrón, pero en su defecto podéis utilizar un tupper bajito como he hecho yo. La he dejado enfriar durante 3 horas. ¡Ya está!
Observaciones
El color del turrón variará según la miel empleada. A mí, no me ha salido típicamente blanco porque he utilizado miel de brezo, que es más bien oscura. Podéis utulizar la que queráis, según vuestros gustos o la que tengáis más a mano.
Si queréis cortar el turrón para darle forma o hacer bocados individuales, os recomiendo que lo hagáis cuando el turrón todavía no esté del todo frio. Será más fácil y no se romperá en mil pedazos.
